The Jonagold and Cox’s Orange apples used create a beautiful balance of acidity, aromatics, and sweetness. After fermentation, the cider was left to age on its lees for 13 years and then finished with a dosage of our Pomme d’Or Ice Cider this spring. The extended time on lees has given this Traditional Method Cider remarkable depth and complexity.
